De forma semelhante, devido \u00e0s suas propriedades antimicrobianas, vem sendo estudado como uma poss\u00edvel alternativa aos antibi\u00f3ticos promotores de crescimento, por\u00e9m sem bons resultados. O \u00e1cido propi\u00f4nico tamb\u00e9m \u00e9 utilizado como intermedi\u00e1rio qu\u00edmico, principalmente na s\u00edntese de pol\u00edmeros.<\/p>\n<p style=\"text-align: justify;\">\u00c9 um \u00e1cido graxo de cadeia curta \u2013 AGCC ou \u00c1c. Graxo Vol\u00e1til \u2013 AGV que se apresenta no estado natural, como um dos produtos da digest\u00e3o da celulose pelas bact\u00e9rias que residem no r\u00famen dos animais herb\u00edvoros. A fermenta\u00e7\u00e3o do material vegetal ingerido no r\u00famen \u00e9 um processo anaer\u00f3bico que converte os carboidratos celul\u00f3sicos em \u00e1cidos graxos de cadeia curta (\u00e1cido ac\u00e9tico, \u00e1cido propi\u00f4nico e but\u00edrico, principalmente).<\/p>\n<p style=\"text-align: justify;\">A atividade depende do pH na subst\u00e2ncia a ser preservada, sendo a forma n\u00e3o dissociada a mais ativa (11 a 45 vezes mais do que a dissociada). Apresentam id\u00eantica efic\u00e1cia contra os microrganismos e s\u00e3o bastante eficazes contra bolores, por\u00e9m t\u00eam pouca a\u00e7\u00e3o contra a maioria das bact\u00e9rias e n\u00e3o apresentam efeito contra as leveduras, nas quantidades recomendadas para uso em alimentos.<\/p>\n<p style=\"text-align: justify;\">Os propionatos s\u00e3o bastante usados na ind\u00fastria de panifica\u00e7\u00e3o devido a sua pouca atua\u00e7\u00e3o contra os fermentos biol\u00f3gicos. Normalmente, usa-se o propionato de c\u00e1lcio nos produtos salgados e o propionato de s\u00f3dio nos produtos doces. N\u00e3o mostram nenhuma toxicidade aguda nem sub-cr\u00f4nica, por\u00e9m foram temporariamente interditados na Alemanha e na \u00c1ustria como conservantes aliment\u00edcios, antes de serem readmitidos em fun\u00e7\u00e3o das Diretivas Europ\u00e9ias.
